Spinacia oleracea 'Baby'
Salad greens are a daily staple in our house and so I make it a priority to grow them. These delicious little spinach leaves will keep on giving as you pick them so you can come back to the garden almost daily to grab a handful for dinner. As with all fast growing greens, you can interplant them with your flowers and slow growing crops and then pull them out when the others need more room... keep on sowing every few weeks for a continued supply.
After all, spinach is an amazing superfood that is packed with iron, vitamins, and minerals, and is most beneficial for us when eaten fresh. Finely chopped spinach is one of my favourite things to hide in my kids' meals, but honestly, when they pick their own veggies from the garden they are more than happy to eat them as well!
